Greek Mahimahi
4 Servings.

· 4 (6-oz) mahimahi or other firm white fish filets about 1 inch thick
· 1 teaspoon black pepper
· ½ teaspoon salt
· Cooking spray (or olive oil)
· 2 cups tomato wedges
· ¼ cup sliced red onion
· 3 tablespoons halved , pitted kalamata olives
· 2 tablespoons chopped fresh parsley
· 1 tablespoon red wine vinegar
· 1 teaspoon chopped fresh oregano
· 2 teaspoons extra-virgin olive oil

Heat a nonstick skillet over medium-high heat. Sprinkle fish with ½ teaspoon pepper and ¼ teaspoon salt. Place fish in lightly sprayed pan; cook 4 minutes on each side or until fish flakes when tested with a fork or until desired degree of doneness. Remove fish from pan; let stand 3 minutes.
While fish cooks, combine remaining ½ teaspoon pepper, remaining ¼ teaspoon salt, tomato and remaining ingredients, tossing well. Serve salad with fish. Yield: 4 servings (1 fillet and ¾ cup salad). Calories: 213; Fat: 6.6g; Protein 31.5g; Carb 5.9g

Grilled Chicken Breasts with Honeydew Salsa
4 Servings.

· 1 1/3 cups diced honeydew or other melon
· ¼ cup finely diced red onion
· 3 tablespoons olive oil
· 1 teaspoon finely chopped, seeded Serrano chile
· ¼ cup finely chopped fresh cilantro, plus ¼ cup cilantro leaves
· 2 tablespoons fresh lime juice
· 2 teaspoons grated lime peel
· 4 boneless chicken breast halves

Combine melon, chopped cilantro, onion, lime juice, 1 & 1/5 tablespoons olive oil, and Serrano in a bowl. Season with salt and pepper, then mix. Coat chicken with remaining oil and prepare barbecue on medium heat. Sprinkle chicken with salt and pepper and grill until brown, about 5 minutes per side. Slice chicken and place on plates. Top with salsa and cilantro leaves and serve.
